Indian Food by Region: A Journey Through the World's Greatest Kitchen

From Punjab's tandoors to Kerala's coconut curries, every Indian region cooks differently — and magnificently. A warm tour of India's regional cuisines.

One country, countless cuisines

India does not have one cuisine — it has dozens, each shaped by climate, history and faith, and each magnificent. What unites them is a genius for spice: not heat for its own sake, but layers of flavor built with a skill refined over thousands of years.

North India

Punjab gave the world tandoori chicken, butter chicken, dal makhani and fluffy naan from clay ovens. Delhi's streets offer chaat, kebabs and parathas, while Lucknow's Awadhi kitchens perfected slow-cooked biryanis and melt-in-the-mouth galouti kebabs. In Rajasthan, cooks turned desert scarcity into treasures like dal baati churma and fiery laal maas.

South India

Tamil Nadu's crisp dosas, fluffy idlis and aromatic Chettinad curries; Kerala's coconut-rich fish moilee, appam and beef fry; Karnataka's masala dosa and filter coffee; Hyderabad's legendary dum biryani — South Indian cooking is rice-centered, coconut-scented and unforgettable.

East and West India

Bengal is the land of fish curries, mustard oil and sweets — rasgulla, sandesh and mishti doi are national treasures. In the west, Gujarat's vegetarian thalis balance sweet, sour and spice in a single plate, Maharashtra offers vada pav and coastal Malvani seafood, and Goa's vindaloo and xacuti carry four centuries of Portuguese influence.

Street food: the beating heart

Pani puri in Mumbai, kathi rolls in Kolkata, momos in the Northeast, dabeli in Gujarat — Indian street food is a daily festival. It is cheap, joyful and made with pride, and no visit is complete without eating at a busy stall surrounded by happy locals.

A vegetarian paradise

India is the easiest country on Earth to eat magnificently without meat. Centuries of vegetarian tradition mean paneer, lentils and vegetables are treated as stars, not substitutes — a gift to the world's food lovers.
